Did you know that hemp seeds are not only edible, but that they are highly nutritious too? You can eat them raw in a salad or cereal. They are very high in amino acids and essential fatty acids.
I'm always amazed at how tiny seeds are such nutritional powerhouses. It makes sense though, considering how much life has to come from a mere seed. They are like little energy capsules! I've been incorporating pumpkin seeds, or pepitas into my diet for awhile now. They are an excellent source of iron. Eating them with veggies on a salad will help increase the absorption too, since your body likes to take in it's iron with a dose of vitamin C. I also love sunflower seeds, which are high in vitamin E, selenium and magnesium. And of course the tasty little sesame seed! Sesames are high in many minerals like copper, magnesium and calcium.
One of my favorite quick and easy go-to side dishes is steamed broccoli with lemon juice and sesame seeds. Yum!
